Bake the mixture in a rectangular tray, turn out and cut into squares. For the syrup, mix 750ml icing sugar, 45ml sifted cocoa powder and 10ml water in a saucepan and bring to boil, stirring constantly until the sugar has melted. Remove from the heat and add 45ml butter. Dip cake squares in syrup and roll in a thick layer of coconut. Place onto a wire rack to set before serving.
Citrus cake squares
Add 15ml each of grated orange and lemon rind to the mixture before baking and stir. Cut into squares once baked and cooled. For an easy citrus icing, cream 60g butter, 375ml icing sugar and 15ml orange juice to a smooth consistency, and spread over the squares.
Vanilla butter cream cupcakes
Beat 140g softened butter and 140g icing sugar in a large bowl till smooth. Add another 140g icing sugar, stirring in one tablespoon of milk at a time, until the mixture is smooth and creamy. Add two drops of a food colouring of your choice and mix until well combined. Spoon the icing into a piping bag and using spiralling motions, pipe onto the cupcakes.
Strawberry cream Swiss roll
Bake the mixture in a greased, lined tin. Whip 240ml heavy cream with 80ml castor sugar until it forms stiff peaks. Add four tablespoons of puréed strawberries, fold in 120ml chopped strawberries and spread across sponge cake. Carefully roll up, sprinkle with castor sugar and serve.
