Preparation Time: 15 minutes | Cook Time: 10 minutes | Serves: 1 four-layer cake (about 20 slices)


Ingredients

For the cake:

180ml cooking oil

Snowflake Creations Vanilla Flavoured Cake Mix

3 extra large Eggs, room temperature

250ml milk

For the icing:

150g butter or baking margarine, softened

300g vanilla-flavoured icing mix

30ml milk

Method

    For the cake:

  • Preheat oven to 180°C.
  • Mix eggs, oil and milk with an electric mixer for about 30 seconds until the mixture is a light creamy colour, then add cake mix.
  • Beat batter with an electric mixer on low heat for about 30 seconds until incorporated. Increase to high speed and beat for about 4 minutes until smooth and combined.
  • Pour the batter evenly into two greased 20cm round cake tins or three 16cm round cake tins, and bake for about 30 minutes (if using smaller tins, reducing baking time slightly).
  • Cool completely before frosting.

  • For the icing:

  • Beat the softened butter or baking margarine with an electric mixer on high speed for about 1 minute until creamy.
  • Combine icing mix with butter/baking margarine and beat on low speed until it resembles breadcrumbs.
  • Add the milk and mix on high for about 2 minutes until creamy.
  • Frost one layer of the cake, then add the second / third layers and frost the surface. Use food colouring if desired to customise your cake.
  • Melt the chocolate, then pipe or spread it on a piece of baking paper to create shapes and patterns that resemble animal prints.
  • Allow the chocolate pieces to set and harden. You can place them in the fridge to speed up this process.
  • Carefully peel the chocolate pieces off the baking paper. Position them on the cake in the desired pattern, using a little melted chocolate as glue to help them stick.
  • You can also use shapes cut out of fondant to create your animal print shapes or nature design.
  • Top with animal toys and decorations to complete the cake.

200g butter/baking margarine

2 extra large Eggs, room temperature

500g Snowflake Creations Vanilla Flavoured Cake Mix

For the icing:

150g butter/baking margarine

300g vanilla-flavoured icing mix

Brown, yellow and black food colouring (for lion decoration)

300ml milk

Method

    For the cookies:

  • In a bowl, beat softened butter/baking margarine until light and fluffy.
  • Gradually add the cake mix and fold with a spoon until combined.
  • Shape the dough into a ball, wrap it in cling film, and refrigerate for at least 1 hour to firm up.
  • Preheat your oven to 180°C.
  • On a lightly floured surface, roll out the chilled dough to about 5mm thickness.
  • Using a cookie cutter, cut out shapes from the dough and place them on a baking tray lined with parchment paper.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Remove from the oven and allow the cookies to set on the baking tray for a few minutes before transferring them to a wire rack to cool completely.

  • For the icing:

  • Sift icing sugar and add just enough water to mix to a smooth, slightly runny consistency. Add essence and colouring.
  • Divide the icing into four portions and use food colouring to create brown, yellow and black batches. Leave the fourth portion white.
  • Decorate the cookies by piping icing on top to resemble a lion’s face (refer to picture), allowing each colour to dry fully before adding the next colour. Use a piping bag with a small round trip or simply spread the icing with a knife or toothpicks to achieve the desired detail.
  • Try some other animal faces for a wild time!

750ml milk

For the icing:

450g butter/baking margarine

900g vanilla-flavoured icing mix

90ml milk

Method

    For the cake:

  • Preheat oven to 180°C.
  • Mix eggs, oil, and milk with an electric mixer for about 30 seconds until the mixture is a light creamy colour. Then add the cake mixes.
  • Beat the batter with an electric mixer on low speed for 30 seconds until incorporated. Then increase on high speed for about 4-6 minutes until smooth and combined.
  • In batches of two at a time, pour batter into greased, round cake tins and bake for 30 minutes or, until the cakes are cooked through. Use different sizes to create your layered effect, remembering to bake smaller cakes for slightly less time. Test with a cake tester.
  • Cool completely before frosting.

  • For Buttercream Frosting:

  • Beat the softened butter or baking margarine with an electric mixer on high speed for about 1 minute until creamy.
  • Combine icing mix with butter/baking margarine and beat on low speed until it resembles breadcrumbs.
  • Add the milk and mix on high for about 2 minutes until creamy.
  • Frost one layer of the cake, then add the second / third layers and frost the surface. Use food colouring if desired to customise your cake.
