Preparation Time: 15 minutes | Cook Time: 10 minutes | Serves: 1 four-layer cake (about 20 slices)


Ingredients

For the cake:

180ml cooking oil

500g Snowflake Creations Vanilla Flavoured Cake Mix

3 extra large Eggs, room temperature

250ml milk

For the icing:

150g butter or baking margarine, softened

300g vanilla-flavoured icing mix

30ml milk

Blue food colouring

Sprinkles

Method

    For the cake:

  • Preheat oven to 180°C.
  • Mix eggs, oil and milk with an electric mixer for about 30 seconds until the mixture is a light creamy colour, then add cake mix.
  • Beat batter with an electric mixer on low heat for about 30 seconds until incorporated. Increase to high speed and beat for about 4 minutes until smooth and combined.
  • Pour the batter evenly into two greased 20cm round cake tins or three 16cm round cake tins, and bake for about 30 minutes (if using smaller tins, reducing baking time slightly).
  • Cool completely before frosting.

  • For the icing:

  • Beat the softened butter or baking margarine with an electric mixer on high speed for about 1 minute until creamy.
  • Combine icing mix with butter/baking margarine and beat on low speed until it resembles breadcrumbs.
  • Add the milk and mix on high for about 2 minutes until creamy.
  • Ice one layer of the cake, then add the second layer of cake and ice the top.
  • Use food colouring to dye half of the remaining icing blue.
  • Put the two layers together. Ice the surface of the bottom half with the blue icing and the surface of the top half with the white icing. Top with sprinkles.
  • Use modelling chocolate to create mini car decorations for the top and side of the cake, or use toys to add a touch of magic!

20 Large cupcake holders / 40 standard cupcake holders

3 extra large Eggs, room temperature

500g Snowflake Creations Vanilla Flavoured Cake Mix

250ml milk

100ml cooking oil

For the icing:

150g butter/baking margarine, softened

300g vanilla-flavoured icing mix

Sprinkles

30ml milk

Method

    For the Cupcakes:

  • Mix the eggs, oil, and milk with an electric mixer for about 30 seconds until the mixture is a light creamy colour. Then add the cake mix.
  • Beat the batter with an electric mixer for about 30 seconds on low speed until incorporated. Then beat on high speed for about 4 minutes until smooth and combined.
  • Place paper cups into cupcake tins and spoon equal quantities of batter into each, until half full.
  • Preheat your oven to 180°C.
  • Bake for about 12 minutes.
  • Cool completely on a wire rack before icing.

  • For the icing:

  • Beat softened butter/baking margarine with an electric mixer for about 1 minute on high speed until creamy.
  • Combine the icing mix with butter/baking margarine and beat on a low speed until it resembles breadcrumbs.
  • Add the milk and mix for about 2 minutes on high speed until creamy.
  • Using a piping bag, frost the top of the cupcakes in a swirl and add sprinkles.
  • Decorate using modelling chocolate to create mini car decorations to top the cupcakes, use edible decorations or toys for a magic touch!

1000g Snowflake Creations Vanilla Flavoured Cake Mix (3 boxes)

500ml milk

For the icing:

300g butter/baking margarine

600g vanilla-flavoured icing mix

60ml milk

Method

    For the cake:

  • Preheat oven to 180°C.
  • Mix eggs, oil, and milk with an electric mixer for about 30 seconds until the mixture is a light creamy colour. Then add the cake mixes.
  • Beat the batter with an electric mixer on low speed for 30 seconds until incorporated. Then increase on high speed for about 4-6 minutes until smooth and combined.
  • Pour batter into four (2 larger tins and 2 smaller tins) greased round cake tins and bake for about 30 minutes (bake smaller tins for a slightly shorter time).
  • Cool completely before frosting.

  • For the icing:

  • Beat softened butter/baking margarine with an electric mixer for about 1 minute on high speed until creamy.
  • Combine icing mix with butter/baking margarine and beat on a low speed until it resembles breadcrumbs.
  • Add the milk and mix on high for about 2 minutes until creamy.
  • Separate the icing into three bowls and use the food colouring to create three different coloured batches of icing.
  • Ice the cakes and add layers of coloured fondant icing to create the background, then use fondant and modelling chocolate to create various shapes like traffic ones, road signs, traffic lights, cars and clouds. Use a dab of melted chocolate to stick fondant to fondant!
