Ingredients

For the cake:

1000g Snowflake Creations Rainbow Cake Mix

200ml cooking oil

500ml milk

6 large Eggs, room temperature

For the icing:

300g butter/white baking margarine, softened

600g vanilla-flavoured icing mix

60ml milk

Pink, blue and yellow food colouring

Manhattan sweets, any other sweets of your choice and colourful macarons to decorate

Method

    For the cake:

  • Preheat oven to 180°C.
  • Mix the eggs, oil and milk with an electric mixer for about 30 seconds until the mixture is a light creamy colour. Then add cake mix.
  • Beat the batter with an electric mixer on low speed for about 30 seconds until incorporated. Then beat on high speed for about 4 minutes until smooth and combined.
  • Pour the batter evenly into two greased 20cm round cake tins and two 16cm round cake tins and bake for about 30 minutes (bake the smaller cakes for slightly less time until a skewer comes out clean).
  • Cool completely before icing.

  • For the icing:

  • Beat the softened butter or baking margarine with an electric mixer for about 1 minute on high speed until creamy.
  • Add the icing mix to the creamed butter/ white baking margarine and beat on slow speed until the mixture resembles breadcrumbs.
  • Add the milk and beat for about 2 minutes on high speed or until creamy.
  • Divide the icing into batches and use the food colouring to achieve the desired icing colours.
  • Ice the cake with a layer of frosting between each layer, and using a piping bag, add coloured stripes to the sides of the cake then smooth out. Create a drip effect using a mix of icing sugar and milk mixed to a thick consistency.
  • Decorate the cake with Manhattan Sweets, spiral sugar lollies, macarons, candy canes and anything else you like to make this cake as magical as possible!

20 large cupcake holders

50g cream cheese

300g Vanilla flavoured icing mix

For Decoration:

1 slab white baking chocolate

Food colouring of your choice

Decorative items such as sprinkles and Manhattan Sweets, etc.

Method

    For the cake:

  • Preheat oven to 180°C.
  • Whisk the eggs, oil and milk until a light creamy colour. Add the Snowflake Creations Vanilla Cake Mix and stir by hand until smooth and combined (do not overmix).
  • Place paper cups into the cupcake tins and spoon equal amounts of batter into each one until half full.
  • Bake for about 12 minutes, then cool completely on a wire rack.
  • Once cool, remove from the paper and break into small pieces.
  • Add the vanilla-flavoured icing mix with 2/3 of the cream cheese and mix well.
  • Combine the icing with cake pops and roll into balls.
  • Insert a stick in the middle and place them in the fridge to harden.

  • Decorate:

  • In batches, melt your chocolate in a bowl over a pot of simmering water or in the microwave then colour to your desired shades with food colouring.
  • Dip the cake pops into the chocolate for the first coating and let them dry and harden.
  • Dip in a second chocolate colour and add your sprinkles / candy before the chocolate hardens.
  • Allow to set in the fridge overnight.
