Preparation Time: 15 minutes | Cook Time: 10 minutes | Serves: 1 four-layer cake (about 20 slices)


Ingredients

For the Cake:

500ml (280 g) Snowflake Cake Flour

3 extra-large eggs

250ml milk

100ml cooking oil

For the Icing:

150g butter or baking margarine, softened

300g vanilla-flavoured icing mix

30ml milk

Food colouring

Edible pearls, balls and sprinkles

PLUS fondant icing or coloured modelling chocolate for decoration

Method

    For the Cake:

  • Preheat the oven to 180°C.
  • Mix the eggs, oil and milk with an electric mixer for about 30 seconds until the mixture is a light creamy colour. Then add cake mix.
  • Beat the batter with an electric mixer on low speed for about 30 seconds until incorporated. Then beat on high speed for about 4 minutes until smooth and combined.
  • Pour the batter into three greased 16cm round cake tins and bake for 25-30 minutes or until a skewer inserted into the centre comes out clean.
  • Cool completely before icing.

  • For the Icing:

  • Beat softened butter/baking margarine with an electric mixer for about 1 minute on high speed until creamy.
  • Combine icing mix with butter/baking margarine and beat on a slow speed until it resembles breadcrumbs.
  • Add the milk and beat for about 2 minutes on high speed or until creamy.
  • Divide the icing into batches and use food colouring with your favourite colours to get the desired colours.
  • Ice one layer of the cake, then add the second layer and third layers with icing in between. Then ice the top and sides of the cake.
  • Using a piping bag with a star nozzle, be creative and pipe coloured icing rosettes onto the cake and around the base.
  • Use coloured modelling chocolate or fondant to create aquarium-themed toppers and decorations for the cake like fish, seaweed, sea-stars, coral, shells and bubbles.

600g vanilla flavoured icing mix

60ml milk

Pink and blue food colouring

Manhattan sweets, any other sweets of your choice and colourful macarons to decorate

Method

    For the Cake:

  • Preheat the oven to 180°C.
  • Beat eggs, oil and water with an electric mixer on slow speed for about 30 seconds until smooth creamy colour. Then add Snowflake Creations Chocolate Cake Mix.
  • Beat batter for about 30 seconds on slow speed until incorporated, then about 4 minutes on high speed.
  • Grease 3 x 16 cm round cake tins and pour each coloured batter into its own tin.
  • Bake in the oven for 10-15 minutes or until the cakes are baked through.
  • Cool the cakes completely before icing.

  • For the Icing:

  • Beat the softened butter or baking margarine with an electric mixer for about 1 minute on high speed until creamy.
  • Add the icing mix to the creamed butter/ white baking margarine and beat on slow speed until the mixture resembles breadcrumbs.
  • Add the milk and beat for about 2 minutes on high speed or until creamy.
  • Ice the cake with a layer of frosting between each layer, and using a piping bag, add coloured stripes to the sides of the cake then smooth out.
  • Create flowers from coloured fondant.
  • Use coloured modelling chocolate or fondant to create aquarium-themed toppers and decorations for the cake like fish, seaweed, sea-stars, coral, shells and bubbles. Top with a show-stopping mermaid tail - use a toy or make your own!
  • Decorate the cake with a cute toy unicorn, Manhattan Sweets and whatever else you like, for a magical result!

Ingredients

For the Cake Pops:

500g Snowflake Creations Vanilla Cake Mix

3 extra-large eggs

100ml cooking oil

250ml milk

20 large cupcake holders

50g cream cheese

300g Vanilla flavoured icing mix

For the Decoration:

1 slab white baking chocolate

Food colouring of your choice

Gel icing pens

Decorative items such as flowers

Fondant icing to create ears

Method

    For the Cake Pops:

  • Preheat oven to 180°C.
  • Whisk the eggs, oil and milk until a light creamy colour. Add the Snowflake Creations Vanilla Cake Mix and stir by hand until smooth and combined (do not overmix).
  • Place paper cups into the cupcake tins and spoon equal amounts of batter into each one until half full.
  • Bake for about 12 minutes, then cool completely on a wire rack.
  • Once cool, remove from the paper and break into small pieces.
  • Add the vanilla-flavoured icing mix with 2/3 of the cream cheese and mix well.
  • Combine the icing with cake pops and roll into balls.
  • Insert a stick in the middle and place them in the fridge to harden.

  • For the Decoration:

  • In batches, melt your chocolate in a bowl over a pot of simmering water or in the microwave then colour to your desired shades with food colouring.
  • Dip the cake pops into the chocolate then let them dry and harden.
  • Decorate with the gel pens to create eyes, and fondant to create little ears. Stick flowers and other decorations on using a dab of gel icing.
  • Allow to set in the fridge overnight.
