Ingredients

For the cake:

180ml cooking oil

500g Snowflake Creations Vanilla Flavoured Cake Mix

3 extra large Eggs, room temperature

250ml milk

For the icing:

150g butter or baking margarine, softened

300g vanilla-flavoured icing mix

30ml milk

Food colouring

Edible pearls, balls and sprinkles

PLUS fondant icing or coloured modelling chocolate for decoration

Method

    For the cake:

  • Preheat oven to 180°C.
  • Mix eggs, oil and milk with an electric mixer for about 30 seconds until the mixture is a light creamy colour, then add cake mix.
  • Beat batter with an electric mixer on low heat for about 30 seconds until incorporated. Increase to high speed and beat for about 4 minutes until smooth and combined.
  • Pour the batter evenly into two greased 20cm round cake tins or three 16cm round cake tins, and bake for about 30 minutes (if using smaller tins, reducing baking time slightly).

  • For the icing:

  • Beat the softened butter or baking margarine with an electric mixer on high speed for about 1 minute until creamy.
  • Combine icing mix with butter/baking margarine and beat on low speed until it resembles breadcrumbs.
  • Add the milk and mix for about 2 minutes on high speed until creamy. Divide the icing into batches and use food colouring with galaxy colours to get the desired colours.
  • Ice one layer of the cake, then add the second layer of cake. Blend your galaxy colours slightly on the sides and surface for a far-out look!
  • Use modelling chocolate or fondant to create space-themed toppers and decorations for the cake like spaceships, rockets, stars, moons and even astronauts - the more the merrier!
  • For even more magic, use space-shaped cookies on the top!

Ingredients

For the cupcakes:

60ml Cooking Oil

1 extra large Egg, room temperature

230g Snowflake Creations Vanilla Flavoured Cake Mix (3 boxes)

100ml milk

For the Vanilla icing:

125g butter/baking margarine

250g vanilla-flavoured cupcake icing mix

25ml milk

Blue and purple food colouring

Sprinkles and chocolate balls (to decorate)

Method

    For the cupcakes:

  • Preheat oven to 180°C.
  • Beat egg, oil and milk and then add the cupcake mix. Beat batter with a whisk until smooth.
  • Place paper cups into cupcake tin. Spoon equal quantities of batter into paper cups.
  • Bake for about 15 minutes.
  • Allow to cool before icing.

  • For the icing:

  • Beat softened butter or margarine with an electric mixer for 1 minute on high speed until creamy. Add icing mix to creamed butter or margarine and beat mixture on slow until mixture resembles breadcrumbs.
  • Add the milk and beat for about 2 minutes on high speed or until creamy.
  • Divide the icing into batches and colour two batches in purple and blue. Add to a piping bag without mixing together, then pipe swirls onto your cupcakes for a magical effect.
  • Top with sprinkles, silver balls, and chocolates balls wrapped in fondant to create an outer space effect!
