Ingredients

For the pancakes:

250 ml Snowflake Cake Wheat Flour

1 egg

15 ml oil

250 ml milk

60 g butter

For the Chantilly cream:

250 ml whipping cream

15 ml icing sugar

5 ml vanilla essence

For the cookies:

Snowflake Creations Cinnamon Flavoured Cookie Mix Kit.

1 packet brown sugar mix (included)

100 g butter

1 egg

1 packet cinnamon cookie mix (included)

2 packets speckled eggs (included)

Method

    For the pancakes:

  • Sift flour.
  • In a jug, combine oil, milk, eggs, and beat well.
  • Combine liquid with flour and beat well to form a smooth batter.
  • Heat 5 ml butter in a pan and pour in the batter to form a thick, fluffy pancake.
  • Turn over when tiny bubbles form.
  • Remove from pan and continue to cook the batter in the same way.

  • For Chantilly cream:

  • Combine ingredients and whip to stiff peaks stage.

  • For the cookies:

  • Beat the brown sugar and butter until light and fluffy.
  • Add the egg and beat well.
  • Add the cookie mix and combine to form a soft dough.
  • Add the speckled eggs to the dough.
  • Refrigerate dough for 1 hour.
  • Preheat oven to 180°.
  • Line a baking sheet.
  • Form dough into balls, place on sheet, flatten slightly.
  • Leaving space for spreading.
  • Bake for 12 to 15 minutes.
  • Cool completely.

  • For finishing:

  • Crush biscuits.
  • Combine with Chantilly cream.
  • Fill pancakes, stack and serve!
