Ingredients

For the Pancakes:

1 cup Snowflake Cake Wheat Flour

1 tsp Snowflake Baking Powder

1 tbsp sugar

Pinch of salt

1 egg

¾ cup milk

1 Tbsp melted butter or oil

½ tsp vanilla, optional

For the Icing:

Marshmallows

Blueberries

Chocolate chips

Honey or syrup

Method

  • In a bowl, mix Snowflake Cake Wheat Flour, Snowflake Baking Powder, sugar and salt. In another bowl, whisk egg, milk, butter, and vanilla.
  • Pour wet ingredients into dry ingredients and mix gently. Don’t overmix (a few lumps are fine.) Let batter rest for 2 minutes.
  • Place a frying pan over medium-low heat and grease lightly.
  • Pour one round circle for the bunny head. After about 5–10 seconds, pour two long ovals on top for the ears. Keep them touching so they join while cooking.
  • Cook until bubbles appear and edges look set (about 1–2 minutes). Flip carefully with a wide spatula and cook another 30–60 seconds. Remove and place on a plate.
  • Repeat the process to make more bunny pancakes. Stack them once cooked.
  • Add chocolate chips for eyes and nose.
  • Repeat for each pancake and stack them when finished.
  • Top with marshmallows, blueberries and syrup or honey. Serve warm.
