Ingredients

For the Cake:

1½ cups (170 g) Snowflake Cake Wheat Flour

1 tsp Snowflake Baking Powder

¾ cup granulated sugar

2 eggs at room temperature

½ Sunflower oil

½ lukewarm milk

Zest of 2 lemons

1 tsp vanilla essence

For the Lemon Drizzle:

½ cup icing sugar

3-4 Tbsp lemon Juice

Method

    For the Cake:

  • Preheat oven to 170°C. Grease and line a loaf tin.
  • Beat sugar and eggs together until well combined. Mix in oil, milk, lemon zest, and vanilla.
  • Sift in Snowflake Cake Wheat Flour and Snowflake Baking powder and mix until well combined.
  • Pour into tin and bake for 40-45 minutes, until a skewer comes out clean.
  • Use a mould or free-cut into a bunny shape.

  • For the Lemon Drizzle:

  • Mix icing sugar and lemon juice to a pourable glaze.
  • Pour over warm cake and let soak in. Cool completely.

  • Assemble:

  • Decorate with raisins for eyes and nose, extra lemon zest, and fruit as desired.
