Ingredients

8 small to medium carrots, peeled

3 tbsp olive oil

¼ cup honey

Salt and ground black pepper to taste

For the Toppings:

Greek style feta cheese

Fresh parsley, finely chopped

Method

  • Preheat oven to 180°C
  • Place the whole peeled carrots in a baking dish. Drizzle with olive oil and mix until the carrots are completely coated with oil. You can halve the carrots down the middle if they are too large.
  • Drizzle honey over the top and season with salt and pepper. Mix again to ensure the carrots are evenly coated and spread out on a baking sheet or roasting tray.
  • Bake the carrots in the preheated oven for about 30 minutes, or longer if you prefer softer carrots. Check their tenderness by inserting a fork or knife into the thickest part of the carrot.
  • Once the carrots are roasted, remove them from the oven.
  • Top each serving with a generous crumbling of feta cheese and garnish with fresh parsley.
