Cajun Hasselback Potatoes

Preparation Time: 7 minutes | Cook Time: 20 minutes


Ingredients

For the Potato Bake:

680g medium potatoes

60ml butter, melted

Pinch of salt

¼ tsp pepper

1 tsp dried parsley

For the Cajun Spice Mix:

3 tsp smoked paprika

1 tsp salt

1 tsp garlic powder

1 tsp pepper

1 tsp onion powder

1 tsp oregano

1 tsp cayenne pepper

½ tsp thyme

For the Cajun Dip:

120 ml mayonnaise

1 tbsp Cajun spice mix (above)

Method

  • Preheat the oven to 220°C. Line a baking dish with parchment paper.
  • Carefully make thin slices halfway down each potato with a sharp knife. Avoid angling the knife to keep the potato intact.
  • Place the potatoes sliced side down into the baking dish. Brush with melted butter and sprinkle with salt and pepper.
  • Bake in the preheated oven for 20 minutes. Remove from oven, flip the potatoes sliced side up, brush again with melted butter, and sprinkle with salt, pepper, and parsley. Bake for an additional 30 minutes, or until fork-tender and crispy on top. Grill for 2-3 minutes for extra crispiness.
  • Meanwhile, combine Cajun dip ingredients and stir to combine.
  • Let the potatoes cool slightly before serving. Serve with the dip!
