Preparation Time: 15 minutes | Total Time: 50 minutes | Serves: 30 slices

Ingredients

1 extra large eggs

250ml pitted dates, finely chopped

200ml (160 g) castor sugar

500g Snowflake white bread for cake flour

5ml vanilla essence

10 ml baking powder

1 ml salt

5 ml ground mixed spice (optional)

250 ml boiling water

Method

  • Place dates in a bowl. Dissolve bicarbonate of soda in boiling water and pour over dates. Set aside.
  • Cream butter and sugar together. Add egg, beating well until light and creamy. Add essence.
  • Sift flour, baking powder, salt and mixed spice together. Add, alternatively with dates and water, to egg mixture. Spoon mixture into a lined and greased 22.5 cm loaf pan.
  • Bake in a preheated oven at 160 degree celcius for 50-55 minutes. Leave in pan for a feww minutes before turning out onto a wire rack to cool.
