Gammon with Sticky Apricot & Mustard Glaze

Preparation Time: 10 minutes | Cook Time: 25 minutes


Ingredients

For the Gammon:

5–2 kg boneless gammon (smoked or unsmoked)

1 onion, quartered

2 bay leaves

6 whole cloves

Water to cover

For the Glaze:

½ cup apricot jam

2 tbsp Dijon or wholegrain mustard

1 tbsp brown sugar

1 tbsp Snowflake cake flour (to help thicken and bind glaze)

1 tsp Snowflake cornflour (optional, for extra gloss)

1 tbsp apple cider vinegar or lemon juice

Pinch of salt

Method

    1. Cook the gammon:

  • Place gammon in a large pot with onion, bay leaves, and cloves.
  • Cover with water and simmer gently for 1½–2 hours until tender.
  • Remove from water and let cool slightly. Peel off skin, leaving a thin layer of fat.

  • 2. Prepare the glaze:

  • In a saucepan, combine apricot jam, mustard, sugar, vinegar, and salt.
  • Whisk in Snowflake flour and cornflour to smooth out the texture.
  • Simmer gently for 5–7 minutes until thickened and glossy.

  • 3. Glaze and roast:

  • Preheat oven to 200°C.
  • Score the fat in a diamond pattern and brush generously with glaze.
  • Roast for 20–30 minutes, basting every 10 minutes until caramelized.
