South African Potato Bake

Preparation Time: 5 minutes | Cook Time: 18 minutes


Ingredients

For the Potato Bake:

3 Tbsp Snowflake Cake Wheat Flour

3 Tbsp butter

1 small onion, finely diced

1 clove garlic, minced/grated

1 tsp thyme, chopped (or ½ tsp dried thyme)

360 ml milk

150 g mild cheddar cheese, shredded

1 pinch nutmeg (optional)

Salt and pepper to taste

1.8 kg potatoes, thinly sliced

Method

  • Melt the butter in a pan over medium heat. Add the onion and cook until tender, about 3-5 minutes.
  • Add the garlic and thyme, cooking until fragrant, about 1 minute.
  • Sprinkle in the Snowflake Cake Wheat Flour, mix well, and cook until lightly golden brown, about 1 minute.
  • Add the milk and cook until the sauce thickens, about 1-2 minutes.
  • Reduce the heat, add ½ cup of the cheese, and mix until melted. Season with nutmeg, salt, and pepper to taste.
  • Spread some of the sauce over the bottom of a large baking dish (or cast iron pan) and layer the potatoes with sauce between each layer, dipping each slice into the sauce as you go.
  • Pour any remaining sauce over the potatoes in the pan, then sprinkle with the remaining cheese.
  • Bake in a preheated oven at 180°C until the potatoes are tender, about 45-60 minutes.
