Spinach & Feta Phyllo Parcels

Preparation Time: 10 minutes | Cook Time: 20 minutes


Ingredients

For the Filling:

300 g fresh spinach (or 250 g frozen, thawed and drained)

200 g feta cheese, crumbled

100 g cream cheese or ricotta

1 small onion, finely chopped

1 garlic clove, minced

1 egg

2 tbsp Snowflake Cake Wheat Flour (helps bind the filling and absorb moisture)

½ tsp Snowflake Baking Powder (optional, for a slightly lighter texture)

Salt and pepper to taste

1 tsp dried oregano or dill (optional)

For the Pastry:

10 sheets phyllo pastry

100 g melted butter or olive oil (for brushing)

Method

  • Prepare the filling: Sauté onion and garlic until soft. Add spinach and cook until wilted (if using fresh). Let cool slightly.
  • Mix it up: In a bowl, combine spinach mixture, feta, cream cheese, egg, Snowflake Cake Wheat Flour, and Snowflake Baking Powder. Season with herbs, salt, and pepper. Mix until well combined.
  • Shape the parcels: Lay out one sheet of phyllo, brush with melted butter, and fold in half. Place a spoonful of filling at one end and fold into triangles or roll into cigar-shaped parcels.
  • Bake: Arrange parcels on a lined baking tray. Brush tops with butter. Bake at 180°C for 20–25 minutes until golden and crisp.
  • Serve: Enjoy warm with tzatziki, sweet chili sauce, or a fresh salad.
