Vanilla Shortbread Stars

Preparation Time: 5 minutes | Cook Time: 20 minutes


Ingredients

For the Gingerbread Cookies:

420 g Snowflake Cake Wheat Flour

180 g Snowflake Cornflour

195 g icing sugar

2 ml salt

500 g cold butter or margarine, cubed

Seeds from 1 vanilla pod (or 1 tsp vanilla essence)

45 ml castor sugar (for sprinkling)

Method

  • Preheat oven to 150℃
  • Sift together Snowflake Cake Wheat Flour, Snowflake Cornflour, icing sugar, and salt.
  • Add vanilla seeds to the dry mix.
  • Rub in butter with fingertips until a soft dough forms. If using vanilla essence, add it to the soft dough and mix into the dough using your hands.
  • Roll out dough on a floured surface to about 1cm thickness.
  • Cut into star shapes using a cookie cutter.
  • Place stars on a greased or lined baking tray.
  • Prick each star gently with a fork for texture.
  • Bake for 20–25 minutes until edges are lightly golden.
  • Sprinkle with castor sugar while still warm.
  • Cool completely before serving or storing.
