Mzansi Loaded Boerewors Rolls

Preparation Time: 10 minutes | Cook Time: 15 minutes


Ingredients

For the Boerie Rolls:

700g boerewors

6 fresh hot dog rolls

1 tbsp feta cheese, crumbled

For the Caramelised Onions:

3 large onions, halved and finely sliced

1 garlic clove, crushed

1½ Tbsp sugar

1 Tbsp butter

½ Tbsp fresh thyme leaves

For the Balsamic cherry tomatoes:

500g cherry tomatoes, halved

1 clove garlic, crushed

2 tbsp extra virgin olive oil

2 tbsp balsamic reduction

1 tsp fresh thyme leaves

Freshly ground salt and pepper

Method

    For the Boerewors:

  • Cook the boerewors in a heated, lightly oiled griddle pan, arranged in a coil shape.
  • Cook for approximately 8-10 minutes on each side, depending on thickness. Remove from the pan and cut into 6 portions.

  • For the Balsamic Cherry Tomatoes:

  • Preheat the oven to 180°C.
  • Toss the halved cherry tomatoes, crushed garlic, thyme leaves, extra virgin olive oil, and balsamic reduction together on a baking tray.
  • Spread the tomatoes across the tray and sprinkle with freshly ground salt and pepper.
  • Roast for about 30 minutes or until the tomatoes are soft and juicy. Remove from the oven and set aside.

  • For the Caramelised Onions:

  • Preheat the oven to 180°C.
  • While the tomatoes are roasting, heat the butter in a pan.
  • Add the crushed garlic, sliced onions, sugar, and thyme. Stir to coat the onions in the butter.
  • Cover the pan and cook on moderate heat for 20-30 minutes, stirring occasionally, until the onions are soft and golden brown. Remove from the heat and set aside.

  • Assemble:

  • Cut the hot dog rolls lengthways down the centre, being careful not to cut all the way through.
  • Fill each roll with a layer of caramelised onions and balsamic cherry tomatoes, then nestle the boerewors into the relish.
  • Sprinkle with crumbled feta cheese and serve immediately while warm.
