Cheese Muffins

Preparation Time: 10 minutes | Cook Time: 20 minutes


Ingredients

For the Muffins:

275g (2 cups) Snowflake Self-raising Wheat Flour

½ tsp Snowflake Baking Powder

100g butter

1 packet biltong sprinkle

150ml milk

50ml vegetable oil

150xg grated cheddar

1 egg

A handful of chives, chopped

1 tsp sea salt

Method

    For the Muffins:

  • Preheat the oven to 200°C (or 180°C for fan) and grease a 12-hole muffin tin (or 2 x 6-hole tins).
  • In a bowl, combine the self-raising flour, baking powder, and sea salt. Add the butter and rub it in with your fingertips until the mixture resembles breadcrumbs.
  • In a separate bowl, whisk together the milk, vegetable oil, and egg.
  • Gently stir the milk mixture into the flour mixture until just combined, being careful not to overmix. Don’t worry if there are some lumps.
  • Fold in the biltong, grated cheddar, and chives.
  • Spoon the batter into the muffin holes and bake for 20 minutes, or until golden brown.
  • Best served warm.
