Chutney Chicken Wings

Preparation Time: 10 minutes | Cook Time: 30 minutes


Ingredients

For the Wings:

1,4 kg chicken wings

4 Tbsp butter chicken spice paste

3 tsp oil

125ml (½ cup) yoghurt

Juice and zest from 1 lemon

125 ml (½ cup) hot chutney

Fresh coriander, for garnish

Method

    For the Wings:

  • Place the chicken wings, butter chicken spice paste, and oil in a resealable plastic bag.
  • Seal the bag and shake it to evenly coat the chicken wings with the marinade.
  • Refrigerate for 4 to 6 hours.
  • Preheat a grill to high heat. Grill the chicken wings for approximately 2 minutes per side to sear them.
  • Move the wings to the oven and roast for 15 to 20 minutes at 220ºC.
  • Brush the wings with hot chutney and finish off under the hot grill.
  • In a separate bowl, combine the yoghurt with the juice from the squeezed lemon until smooth.
  • Smear dollops of the yoghurt mixture on the bottom of a serving tray, place the chicken wings on top, and garnish with coriander and additional hot chutney.
