Ingredients

500mg (280g) Snowflake cake flour

1ml salt

30ml cooking oil

250ml boiling water

45ml butter or margarine, melted

750ml cooking oil for frying

Method

  • Sift flour and salt together. Combine oil and water. Add to dry ingredients and cut in with a knife. Knead lightly to a firm dough.
  • Roll out dough on a lightly floured surface into a rectangular shape of about 26 x 30 cm. Brush melted butter over dough and roll up like a Swiss roll (from the short side). Cover and leave to rest for about 15 minutes.
  • Cut roll into about 10 pieces. Roll out each piece on a lightly floured surface to a round shape of about 20 cm in diameter. Heat a little oil in a medium, heavy-based frying pan. Fry rotis, one at a time, on both sides until golden brown.
