Deluxe Naan Bread

Preparation Time: 10 minutes | Cook Time: 15 minutes


Ingredients

For the Naan Bread:

2 cups Snowflake Cake Wheat Flour

½ tsp bicarbonate of soda

1 tsp sugar

¾ tsp salt

¾ cup plain yoghurt , plus 1-2 tsp

1 tsp oil

For the Filling:

2-3 chopped green chillies

¼ cup chopped coriander leaves

1 tsp chaat masala

1½ cups grated mozzarella cheese

For the Topping:

2 Tbsp butter, softened for brushing

2-3 tbsp chopped garlic

1-2 Tbsp chopped coriander leaves, for garnish

Method

    For the Naan Bread:

  • In a mixing bowl, combine the flour, bicarbonate of soda, sugar,and salt.
  • Make a well in the centre and add the ¾ cup of yoghurt. Mix to combine using a spoon or spatula.
  • Knead for 3-4 minutes until a smooth dough forms. If necessary, add 1-2 teaspoons of extra yoghurt.
  • Coat the surface of the dough with 1 teaspoon of oil. Cover and let it rest for 2 hours.

  • For the Filling:

  • In a bowl, mix together all the filling ingredients.
  • Refrigerate until ready to use.

  • Assembly:

  • Preheat a large steel or cast iron pan while you prepare the naan.
  • Dust a kitchen surface with flour and divide the dough into 5 portions (about 85-90g each).
  • Take one portion and flatten it out using your hands or a rolling pin, rolling it to about 5-6mm thickness.
  • Place 2-3 tablespoons of filling in the centre, pull the dough from the sides to the centre to form a pocket, and seal by pinching the dough.
  • Roll out the filled dough again to ⅛ – ¼ inch thickness.
  • Sprinkle a few drops of water on top and add the chopped garlic, coriander, and cheese, spreading it around to ensure it sticks.
  • Flip the dough and sprinkle more water on the other side.
  • Place it onto your hot pan, cover and cook for 45 seconds on medium heat.
  • Remove the lid, turn the bread over and cook for 1-2 minutes off the heat.
  • Brush with softened butter mixed with garlic, and top with chopped coriander.
