Lekker Oat Crunchies

Preparation Time: 10 minutes | Cook Time: 20 minutes


Ingredients

For the Crunchies:

1 cup (130 g) Snowflake Cake flour

230 g butter

1 tbsp golden syrup

2 cups oats

1 cup coconut

1 cup brown sugar

1 tsp bicarbonate of soda

Method

    For the Crunchies:

  • Preheat the oven to 180°C.
  • In a bowl, mix the flour, oats, and coconut together.
  • Melt the butter in a small pot, then add the golden syrup and brown sugar. Heat until bubbling.
  • When the butter mixture is bubbling, add the bicarbonate of soda and stir through, then remove from heat.
  • Pour the butter mixture into the dry ingredients and stir together by hand.
  • Using the back of a metal spoon, gently press the mixture into a greased or lined baking tray (approximately 30 cm x 20 cm or similar, depending on how thick you like the crunchies; a thinner layer will make crisper crunchies and a thicker layer will make them chewier).
  • Bake for 15 minutes at 180°C, then turn the oven down to 160°C and bake for a further 10 minutes until golden brown.
  • Allow to cool in the pan before slicing into squares.
