30-day health bran muffins

 



Preparation Time: 20 minutes

Cook Time: 20 - 25 minutes

Serves: Makes 24 standard

The mixture for these delicious and very healthy muffins can be stored in an airtight container in the refrigerator for up to 30 days and used as needed.

Ingredients

250ml (140 g) Snowflake nutty wheat

10ml bicarbonate of soda

5ml salt

500ml (90 g) Snowflake digestive bran

375ml (300 g) soft brown sugar

250ml (150 g) dried fruit cake mix

125g pitted dates, finely chopped

500ml milk

125ml cooking oil

5ml vanilla essence

2ml extra-large eggs

375ml Snowflake Cake Flour

Method

  • Sift cake flour, nutty wheat, bicarbonate of soda and salt together. Add bran left behind in sieve. Add digestive bran, sugar, fruit cake mix and dates.
  • Whisk eggs, milk, oil and essence together. Add to dry ingredients and mix lightly until just combined. Do not over-mix; mixture should still be lumpy.
  • Spoon mixture into greased muffin pans, filling each two-thirds full. Bake in a preheated oven at 180 °C for 20 - 25 minutes, until done and golden brown. Turn out onto wire racks to cool. Serve warm with butter.
