Puffs with custard & toffee sauce

 



Preparation Time: 2 - 3 minutes

Cook Time: 25 minutes

Serves: Makes about 16

Light and crispy, these treats will not last the day.

Ingredients

1  quantity choux pastry

Custard filling

500ml milk

80ml (65 g) sugar

45  m custard powder

15ml butter or margarine

3ml vanilla or lemon essence

125ml fresh cream

Toffee sauce

55g Bar One chocolate bars, coarsely chopped

60ml milk

Method

  • Puffs: Place heaped teaspoonsful of choux pastry onto greased baking trays. Bake in a preheated oven at 200 °C for 10 minutes. Reduce oven temperature to 180 °C and continue baking for about 15 minutes. Leave to cool in oven.
  • Filling: Heat milk in a medium, heavy-based saucepan. Mix sugar and custard powder together. Add some of the heated milk to the custard mixture and mix well.
  • Add to hot milk in saucepan. Boil until it starts to thicken, stirring constantly.
  • Remove from heat and add butter and essence. Mix well and set aside to cool completely.
  • Whip cream until soft peak stage and gently fold into cooled custard mixture, using a metal spoon. Fill puffs.
  • Sauce: Place chocolate pieces and milk into a small, heavy-based saucepan and melt over medium heat. Stir constantly until chocolate is melted and sauce is smooth. Pour over puffs and serve immediately.
