Apricot Squares

 



Preparation Time: 10 minutes

Cook Time: 20 minutes

Serves: Approximately 30

Not just a South African family classic, but an all-time favourite that are so easy to make, moreish. Serve them with a hot cup of tea or put them in your kids' lunchboxes for a delicious treat.

Ingredients

2  Extra large Eggs

60ml Cooking Oil

125ml Milk

180ml Apricot Jam

125ml Desiccated Coconut

Method

  • Preheat oven to 180ºC
  • Place Sweet mix into a mixing bowl
  • In a separate bowl, lightly beat eggs, oil and milk
  • Add to Sweet mix and mix until a soft dough is formed. Do not over mix!
  • Use 2/3 of the dough and flatten onto a well-greased baking tray
  • Evenly spread the jam onto the flattened dough
  • Mix the coconut with the rest of the dough and rest in the freezer for 10 minutes. Grate or crumble this over the flattened dough mix with the apricot jam
  • Bake for ±0 minutes until light golden brown
  • Cool down and cut into squares
