Asparagus starter

 



Preparation Time: 15 minutes

Cook Time: 5 - 10 minutes

Serves: Serves 4 - 6

A lovely asparagus starter

Ingredients

60g butter or margarine

45ml Snowflake cake flour

420g can asparagus salad cuts or spears, liquid reserved

125ml fresh cream

30g packet salt and vinegar potato chips, crushed

125ml (50 g) grated cheddar cheese

1ml Salt and freshly ground black pepper to taste

1ml Cayenne pepper for sprinkling on top

Method

  • Melt butter in a medium, heavy-based saucepan. Add flour and stir over low heat for about 1 minute. Add asparagus, reserved liquid, cream and half the crushed chips. Heat through. Remove from heat add cheese and seasoning.
  • Spoon into individual ovenproof serving bowls and sprinkle with remaining crushed chips and cayenne pepper.
  • Bake in a preheated oven at 200 °C for 5 - 10 minutes, or until golden brown. Serve immediately.
