Bakewell tart (frangipane)

Cook Time: 40 minutes

Serves: Makes 1 tart

A Bakewell tart is an English confection consisting of a shortcrust pastry shell beneath layers of jam, frangipane, and a topping of flaked almonds.

Ingredients

300  ½ quantity (about g) rich shortcrust pastry OR 1 quantity (about g) sweet flan pastry

Filling

60ml (80 g) smooth apricot jam, slightly heated

80g butter or margarine, softened

125ml (100 g) castor sugar

5ml almond essence

250ml (100 g) ground almonds

45ml smooth apricot jam for topping, slightly heated

2  extra-large eggs

Method

  • Roll out pastry on a lightly floured surface, to a thickness of about 3 mm. Line a greased 23 cm ovenproof tart dish with pastry. Prick base and bake blind in a preheated oven at 200 °C for 15 minutes. Remove greaseproof paper and beans. Leave to cool slightly. Reduce oven temperature to 180 °C.
  • Filling: Spread jam over base. Cream butter and sugar together. Add eggs, one at a time, beating well after each addition until light and creamy. Add essence and ground almonds and mix well.
  • Spoon mixture over jam and bake for about 25 minutes, or until golden. Brush jam over top of tart.
  • Serve warm or cold.
