Banana and cinnamon muffins

 



Preparation Time: 15 minutes

Cook Time: 20 - 25 minutes

Serves: Makes 12 standard

Ingredients

500ml (280 g) Snowflake cake flour

10ml Snowflake baking powder

5ml bicarbonate of soda

3ml salt

5ml ground cinnamon

200ml (160 g) sugar

5ml grated orange rind (optional)

100ml milk or plain yoghurt

125ml cooking oil

5ml vanilla essence

3  large bananas, mashed (about 250 g)

2  extra-large eggs

Method

  • Sift flour, baking powder, bicarbonate of soda, salt and cinnamon together. Add sugar and orange rind.
  • Whisk eggs, milk, oil and essence together. Add to dry ingredients, alternately with mashed bananas. Mix lightly until just combined. Do not over-mix; mixture should still be lumpy.
  • Spoon mixture into greased muffin pans, filling each two-thirds full. Bake in a preheated oven at 180 °C for 20 - 25 minutes until done and golden brown. Turn out onto wire rack to cool. Serve warm with butter.

Made this last night when I was taken over by a serious muffin craving and it turned out beautiful on the very first try. Great recipe. Good for baking beginners as well
