Boiled fruit loaf

 



Preparation Time: 8 minutes

Cook Time: 1 hour

Serves: Makes 1 loaf

This sticky cake is quick and easy to make and will keep well if stored in an airtight container.

Ingredients

250ml (200 g) caramel or light brown sugar

250ml water

150g butter or margarine

500ml (300 g) dried fruit cake mix

125g glace cherries, halved

5ml ground cinnamon

2ml ground cloves

5ml ground ginger

5ml vanilla essence

450ml (250 g) Snowflake cake flour

3ml Snowflake baking powder

5ml bicarbonate of soda

2ml salt

2  extra-large eggs

Method

  • Combine sugar, water, butter, fruit cake mix, cherries and spices in a medium heavy-based saucepan. Boil over medium heat for about 8 minutes. Remove from heat and leave to cool until lukewarm.
  • Lightly whisk eggs and essence together.
  • Sift flour, baking powder, bicarbonate of soda and salt together. Add dry ingredients to cooked fruit mixture and mix well. Add egg mixture and stir well.
  • Spoon mixture into a lined and greased 22.5 cm loaf pan. Bake in a preheated oven at 160 °C for about 1 hour. Leave in pan for a few minutes before turning out onto a wire rack to cool.
  • Wrap and store for a few days.
