Boxing Day Tart

 



Preparation Time: Approximately 30 minutes

Cook Time: 20 minutes

Serves: 6

Turn festive leftovers into a scrumptious savoury treat.

Ingredients

For the base

280g Snowflake Self-Raising Wheat Flour

2ml salt

180ml milk

80ml cooking oil

For the topping

30ml cooking oil

1  onion, coarsely chopped

250g chicken, turkey or roast meat, coarsely chopped

150g grated Cheddar cheese

30ml chopped fresh mixed herbs or 10ml dried mixed herbs

2  extra-large eggs

300ml milk

2ml ground paprika

1  salt and freshly ground black pepper if desired

Method

  • To make the base: sift the flour and salt together. Whisk the milk and oil together and add to the dry ingredients. Cut in with a knife and knead lightly to a soft pastry. Press out evenly into a greased 23x32cm baking tray.
  • To make the topping: heat the oil in a medium, heavy-based saucepan. Add the onion and sauté for a few mins until soft. Add the meat and fry lightly. Remove from the heat and leave to cool slightly.
  • Layer the onion and meat mixture over the pastry. Top with cheese, herbs and seasoning.
  • Whisk the eggs and milk together. Pour the egg and milk mixture over the filling and sprinkle with paprika. Bake in a preheated oven at 200°C for about 20 mins. Cut into squares and serve.
