Buttermilk waffles with bananas

 



Preparation Time: 20 minutes

Cook Time: 40 minutes

Serves: Makes: 8

Buttermilk adds a deep richness to these waffles – perfect for breakfast or dessert.

Ingredients

For the batter

500ml Snowflake Cake Wheat Flour

15ml Snowflake Baking Powder

3ml salt

10ml sugar

2  eggs

250ml buttermilk

90g Butter or margarine, melted

For the filling

60g Butter or margarine

60ml Light brown sugar

5ml Grated orange rind

80ml Fresh orange juice

6  Ripe bananas, cut into slices

2ml Ground cinnamon

Method

  • To make the batter: sift the flour, baking powder and salt together then add the sugar.
  • Whisk the eggs, buttermilk and melted butter together. Add to the dry ingredients and beat until the batter is smooth, thick and lump-free. Leave the batter to stand for about 30 mins.
  • Heat the waffle pan, spray well with cooking spray and pour the batter onto plates to cover the base. Leave to set slightly and then close the lid. Cook for a few mins until cooked through and golden brown.
  • To make the filling: Melt the butter in a large, heavy-based frying pan. Add the sugar and stir until melted. Add the orange rind, juice and bananas. Fry for about 3 mins. Sprinkle cinnamon over the bananas and serve with the waffles.
