Buttermilk and coconut pudding

Serves: Serves 4 - 6

Buttermilk and coconut pudding is so delicious and full of flavor! Guaranteed to be a crowd pleaser!

Ingredients

125g butter or margarine, softened

200ml (160 g) sugar

250ml (140 g) Snowflake self-raising flour

2ml salt

60ml (20 g) desiccated coconut

375ml buttermilk

125ml milk

5ml caramel essence

2  extra-large eggs

Method

  • Cream butter and sugar together. Add eggs, one at a time, beating well after each addition until light and creamy.
  • Sift flour and salt together. Add coconut.
  • Whisk buttermilk, milk and essence together. Add, alternately with flour mixture, to egg mixture. Mix well until smooth. Pour into a medium, greased ovenproof dish.
  • Bake in a preheated oven at 180 °C for about 1 hour. Serve warm or at room temperature with whipped cream or custard.
