Cappuccino coconut cookies

Cook Time: 10 - 12 minutes

Serves: Makes about 15

The best coffee treat!

Ingredients

250g Sowflake Easymix cappuccino muffin (375 ml)

125ml (40 g) desiccated coconut

80ml cooking oil

30ml milk

30ml cinnamon sugar for topping

1  extra-large egg

Method

  • Place premix into a mixing bowl. Add coconut. Lightly beat egg, oil and milk together. Add to premix and mix with a spoon or whisk until just combined. Do not over-mix.
  • Roll dough into heaped teaspoon-size balls and place onto greased baking trays, leaving enough space for spreading. Press down lightly with a fork. Sprinkle the cinnamon sugar over cookies.
  • Bake in a preheated oven at 180 °C for 10 - 12 minutes.
