Ingredients
60g butter or margarine
60ml (50 g) soft brown sugar
375ml (200 g) icing sugar, sifted
5ml vanilla or caramel essence
20ml milk
Method
- Sift flour, baking powder, bicarbonate of soda, salt and spices together. Add sugar.
- Whisk egg and milk together and add to dry ingredients.
- Melt butter and syrup together in a small, heavy-based saucepan. Add to cake mixture and beat until smooth. Add ginger.
- Spoon mixture into a lined, greased 21 cm square or 23 cm loose-bottom springform cake pan. Bake in a preheated oven at 160 °C for about 45 minutes. Leave in pan for a few minutes before turning out onto a wire rack to cool.
- Icing: Melt butter and sugar together slowly. Add icing sugar, essence ad milk and mix until smooth. Ice cake.
