Cheese aigrettes

 



Preparation Time: 15 minutes

Cook Time: 35 minutes

Serves: Makes about 25

A bite sized piece of goodness, perfect for finger snacks.

Ingredients

250ml (100 g) grated cheddar cheese

1  quantity choux pastry

750ml Cooking oil for deep-frying

1ml Cayenne pepper for sprinkling

Method

  • Add cheese to choux pastry.
  • Heat oil in a small, heavy-based saucepan. Gently drop heaped teaspoonsful of mixture into hot oil and deep-fry for 3 - 5 minutes or until golden brown. Remove from oil with a slotted spoon and drain on paper towel.
  • Sprinkle with cayenne pepper. Serve piping hot or at room temperature.
