Cheese and herb straws

 



Preparation Time: 15 minutes

Cook Time: 40 - 42 minutes

Serves: Makes about 70

You only need a handful of ingredients to make these cheese and herb pastry straws, they cook quickly, they look fancy, and they taste delicious!

Ingredients

300  ½ quantity (about g) puff pastry OR ½ quantity (about 325 g) flaky pastry

375ml (150 g) grated cheddar cheese

45ml finely chopped fresh rosemary or 15 ml dried

2ml cayenne pepper

15ml Beaten egg and milk for glazing

125ml to 250 ml extra chopped rosemary for topping

Method

  • Roll out pastry on a lightly floured surface, into a rectangular shape of about 24 x 28 cm, to a thickness of about 3 mm.
  • Sprinkle cheese, rosemary and cayenne pepper over half the pastry. Fold pastry to enclose cheese mixture between payers of pastry. Refrigerate for about 30 minutes.
  • Roll out again on a lightly floured surface, into a rectangular shape of about 24 x 28 cm, to a thickness of 3 mm. Cut into strips of 1.5 x 12 cm. Twist each strip and place onto greased baking trays. Brush with beaten egg and milk and sprinkle with extra chopped rosemary.
  • Bake in a preheated oven at 200 °C for 10 - 12 minutes, or until golden brown. Cool completely and store airtight.
