Cheese & chive muffins

 



Preparation Time: 5 minutes

Cook Time: 15 minutes

Serves: Makes 8 standard

These Cheese and Chive Muffins are the perfect last minute treat for unexpected guests!

Ingredients

250ml (140 g) Snowflake cake flour

10ml Snowflake baking powder

2ml mustard powder

1ml cayenne pepper

375ml (150 g) grated mature cheddar cheese

45ml chopped fresh chives or other herb of choice

100ml milk

80ml cooking oil

1  extra-large egg

Method

  • Sift flour, baking powder, mustard powder and cayenne pepper together. Add cheese and chives and mix well.
  • Whisk egg, milk and oil together. Add to dry ingredients and mix lightly until just combined. Do not over-mix; mixture should still be lumpy.
  • Spoon mixture into greased muffin pans, filling each two-thirds full. Bake in a preheated oven at 200 °C for about 15 minutes, until done and golden brown. Turn out onto a wire rack to cool. Serve warm with butter.
