Chinese chews

 



Preparation Time: 15 minutes

Cook Time: 25 minutes

Serves: Makes 24

Have you ever heard of Chinese Chews? They’re absolutely delicious date-nut bars!

Ingredients

60g butter or margarine, softened

200ml (160 g) sugar

5ml vanilla essence

250ml (140 g) Snowflake cake flour

10ml Snowflake baking powder

150g pitted dates, coarsely chopped

75g red glace cherries, coarsely chopped

50g walnuts, coarsely chopped

2  extra-large eggs

Orange icing

375ml (200 g) icing sugar

5ml butter or margarine, softened

30ml fresh orange juice

Method

  • Cream butter and sugar together. Add eggs, one at a time, until light and creamy. Add essence.
  • Sift flour and baking powder together. Add to egg mixture and mix well. Fold in dates, cherries and walnuts.
  • Spoon mixture into a greased 18 x 27 cm pan. Bake in a preheated oven at 180 °C for about 25 minutes. Leave in pan to cool slightly.
  • Icing: Sift icing sugar, add butter and orange juice and mix until smooth. Drizzle icing over chews and cut into slices. Store in an airtight container.
