Chocolate and berry trifle

 



Preparation Time: 15 minutes

Cook Time: 30 - 35 minutes

Serves: Serves 6 - 8

This Chocolate & Berry Trifle is layer upon layer of rich, decadent chocolate that will knock your socks off!

Ingredients

2  x 80g packets strawberry jelly

750ml boiling water

500g Snowflake Easymix chocolate muffin

160ml cooking oil

250ml milk or water

150ml sherry (optional)

500g About fresh strawberries, quartered

375ml About fresh cream, whipped

2  extra-large eggs

125ml Flaked almonds, toasted for garnishing

Method

  • Dissolve jelly in boiling water. Leave for a few hour or set overnight. Cut into cubes and set aside.
  • Place premix into a mixing bowl. Lightly beat eggs, oil and milk together. Add to premix and mix with a spoon or whisk until just combined. Do not over-mix.
  • Spoon into a lined and greased pan of about 18 x 27 cm. Bake in a preheated oven at 180 °C for 30 - 35 minutes. Leave in pan for a few minutes. Turn out onto a wire rack to cool completely. Cut into squares.
  • Layer cake squares into 8 medium glasses. Drizzle with sherry. Layer cut strawberries, jelly, custard and whipped cream. Complete all glasses. Garnish with extra strawberries, flaked almonds and mint leave.
