Chocolate toffee cluster cookies

 



Preparation Time: 20 minutes

Cook Time: 35 - 45 minutes

Serves: Makes about 35

makes the perfect match for late night hot chocolate

Ingredients

80g butter or margarine

200g milk or dark chocolate, coarsely chopped

125ml (100 g) light brown sugar

3ml vanilla essence

375ml (210 g) Snowflake self-raising flour

1ml salt

100g white chocolate, coarsely chopped

100g soft caramel toffee, coarsely chopped

2  extra-large egg whites, beaten

Method

  • Melt butter and half the milk chocolate together in microwave or in a glass bowl over a saucepan of simmering water. Add sugar. Remove from heat and add essence.
  • Sift flour and salt together. Add to chocolate mixture and mix until well combined. Add beaten eggs and stir well. Fold in remaining chocolate, white chocolate and toffee.
  • Spoon heaped teaspoonsful of mixture onto lined and greased baking trays, leaving enough space for spreading.
  • Bake in a preheated oven at 180 °C for about 12 minutes. Leave on baking trays for a few minutes to cool, before turning out onto wire racks to cool completely. Store in an airtight container.
