Cinnamon cake

 



Preparation Time: 20 Minutes

Cook Time: 35 minutes

Serves: Makes 1 large cake

A light and wonderful cake.

Ingredients

250ml (140 g) Snowflake cake flour

30ml cornflour

15ml Snowflake baking powder

2ml salt

45ml ground cinnamon

250ml (200 g) sugar

125ml milk

125ml cooking oil

45ml cinnamon sugar

3  extra-large eggs, separated

Syrup

30ml butter or margarine

45ml smooth apricot jam

Method

  • Sift flour, cornflour, baking powder, salt and cinnamon together.
  • Whisk sugar, egg yolks, milk and oil together. Add to dry ingredients and mix well until smooth.
  • Beat egg whites until stiff peak stage. Gently fold egg whites into cake mixture, using a metal spoon.
  • Spoon mixture into a greased 21 cm square or 23 cm loose-bottom springform cake pan. Bake in a preheated oven at 180 °C for about 35 minutes.
  • Syrup: Melt butter and jam together in the microwave.
  • Remove cake from over and prick well. Pour hot syrup over warm cake. Leave to cool and sprinkle with cinnamon sugar.
