Citrus cake squares

 



Preparation Time: 10 Minutes

Cook Time: 25 - 30 minutes

Serves: Makes about 20

Citrus cake squares

Ingredients

250g Snowflake Easymix vanilla muffin mix

15ml grated orange rind

15ml grated lemon rind

125ml cooking oil

125ml milk or water

2  extra-large eggs

Citrus icing

60g butter or margarine, softened

375ml (200 g) icing sugar, sifted

15ml About fresh orange or lemon juice

Method

  • Place premix into a mixing bowl. Add orange and lemon rind. Lightly beat eggs, oil and milk together. Add to premix and mix with a spoon or whisk until just combined. Do not over-mix.
  • Spoon mixture into a grease 20 cm square ovenproof dish. Bake in a preheated oven at 180 °C for 25 - 30 minutes. Leave in pan to cool.
  • Icing: Cream butter and icing sugar together. Add enough orange juice to mix to a smooth, spreadable consistency. Spread icing on top of cake and garnish with extra lemon zest, if preferred. Cut into squares.
