Citrus fruit ring cake

Serves: Makes 1 large cake

Citrus fruit ring cake

Ingredients

125g butter or margarine, softened

250ml (200 g) sugar

500ml (280 g) Snowflake cake flour

5ml Snowflake baking powder

250ml (150 g) dried fruit cake mix

10ml grated orange rind

5ml bicarbonate of soda

250ml sour milk or buttermilk

2  extra-large eggs

Syrup

125ml (100 g) sugar

125ml fresh orange juice

30ml fresh lemon juice

5ml grated orange rind

Method

  • Cream butter and sugar together. Add eggs, one at a time, beating well after each addition until light and creamy.
  • Sift flour and baking powder together. Add to creamed mixture. Add fruit cake mix and orange rind.
  • Dissolve bicarbonate of soda in sour milk and add to creamed mixture alternately with dry ingredients. Mix well.
  • Spoon mixture into a greased 23 cm ring cake pan and bake in a preheated oven at 180 °C for 45 - 50 minutes.
  • Syrup: Combine ingredients in a small, heavy-based saucepan. Bring to the boil, stirring constantly for 2 minutes.
  • Remove cake from oven and leave to cool for a few minutes in pan. Turn out and pour hot syrup over hot cake.
