Citrus and poppy seed muffins

 



Preparation Time: 15 Minutes

Cook Time: 20 - 25 minutes

Serves: Makes 10 standard muffins

Citrus and poppy seed muffins

Ingredients

500ml (280 g) Snowflake cake flour

12ml Snowflake baking powder

3ml salt

125ml (100 g) sugar

10ml grated lemon rind

60ml (40 g) poppy seeds

125ml milk

125g butter or margarine, melted

125ml fresh lemon juice

2  extra-large eggs

Method

  • Sift flour, baking powder and salt together. Add sugar, lemon rind and poppy seeds.
  • Whisk eggs, milk, melted butter and lemon juice together. Add to dry ingredients and mix lightly until just combined. Do not over-mix; mixture should still be lumpy.
  • Spoon mixture into greased muffin pans, filling each two-thirds full. Bake in a preheated oven at 200 °C for about 20 minutes until done and golden brown. Turn out onto wire rack to cool. Serve warm with butter.
