Cocktail fruit tart

 



Preparation Time: 10 Minutes

Cook Time: 30 minutes

Serves: Makes 1 tart

Cocktail fruit tart for any family occasion.

Ingredients

125ml (100 g) castor sugar

80g butter or margarine, melted

375ml (210 g) Snowflake self-raising flour

5ml bicarbonate of soda

1ml salt

385g can cocktail fruit

2  extra-large eggs

Sauce

125ml evaporated milk

80ml (65 g) sugar

10ml caramel essence

Method

  • Beat eggs and sugar until light and creamy. Add melted butter and mix well.
  • Sift flour, bicarbonate of soda and salt together. Add to creamed mixture and beat until smooth. Add cocktail fruit with liquid and spoon into a greased 23 cm ovenproof dish.
  • Bake in a preheated oven at 180 °C for about 30 minutes.
  • Sauce: Combine evaporated milk and sugar in a small, heavy-based saucepan. Boil over low heat, stirring constantly. Remove from heat and add essence. Pour over tart when taken from oven. Serve hot or cold with custard.
