Cocktail sausage rolls

Cocktail sausage rolls

Ingredients

30ml cooking oil

500g lean beef mince

1  medium onion, finely chopped

3  slices white bread

60ml beef stock

1ml ground cloves

2ml ground coriander

30ml brown vinegar

1  quantity (450 g) soda water pastry OR quantity (400 g) hot water pastry

1ml Salt and freshly ground black pepper to taste

1  Beaten egg for glazing

15ml milk for glazing

Method

  • Heat oil in a medium, heavy-based saucepan and fry until it changes colour. Add onion and saute for a few minutes.
  • Soak bread slices in beef stock. Add seasoning, spices and vinegar. Add to onion mixture and simmer for a few minutes. Remove from heat and leave to cool completely.
  • Roll out pastry on a lightly floured surface. Cut into five rectangular pieces of 10 x 27 cm. Place meat in a line down the middle. Fold one side of pastry firmly over meat. Brush edge with water and cover with other side of pastry, to seal.
  • Cut into sections of about 4 cm. Place onto greased baking trays. Brush with beaten egg and milk. Bake in a preheated oven at 200 °C for about 20 minutes.
