Serves: makes about 20 large or 40 standard cupcakes

Every chocolatey bite is luxuriously rich and moist. Whip them up for a party, lunchbox or anytime treat.

Ingredients

For the cupcakes

3  extra large eggs

100ml cooking oil

250ml milk

500g Snowflake Creations Chocolate Cake Mix

20  large cupcake holders

For the icing

150g butter/baking margarine, softened

30ml milk

300g chocolate flavoured icing mix

Method

  • First bake the cupcakes...
  • Preheat oven to 180°C
  • Mix eggs, oil and milk with a whisk until a light creamy colour, then add mix and mix by hand until smooth and combined (do not overmix)
  • Place paper cups into the cupcake tins and spoon equal quantities of batter into each until half full
  • Bake for about 12 minutes
  • Cool completely on a wire rack before icing
  • ... then make the icing
  • Beat softened butter/baking margarine with an electric mixer for about 1 minute on high speed until creamy
  • Add icing mix to butter/baking margarine and mix on slow speed until it resembles breadcrumbs
  • Add the milk and mix for about 2 minutes on high speed until creamy
  • Decorate cooled cupcakes with icing
