Creations Vanilla Cake

 



Preparation Time: 10 minutes

Cook Time: 30 minutes plus 10 minutes for decorating

Serves: 1 double-layer cake

The all-time classic, any-occasion cake. Delightfully light and fluffy vanilla sponge with perfectly sweet icing.

Ingredients

For the cake:

3  extra-large eggs

100ml cooking oil

250ml milk

500g Snowflake Creations Vanilla Flavoured Cake Mix

For the icing:

150g butter or baking margarine, softened

300g vanilla flavoured icing mix

30ml milk

Method

  • First bake the cake...
  • Preheat oven to 180°C
  • Mix eggs, oil and milk with an electric mixer for about 30 seconds until a light creamy colour, then add cake mix
  • Beat batter with an electric mixer for about 30 seconds on low speed until incorporated, then about 4 minutes on high speed until smooth and combined
  • Pour batter into two greased 20 cm round cake tins and bake for about 30 minutes
  • Cool completely before icing
  • ...then make the icing
  • Beat softened butter/baking margarine with an electric mixer for about 1 minute on high speed until creamy
  • Combine icing mix with butter/baking margarine and beat on a slow speed until it resembles breadcrumbs
  • Add the milk and mix for about 2 minutes on high speed until creamy
  • Ice one layer of the cake, then add the second layer of cake and ice the surface
