Our deliciously dense and moist anytime cake with pineapple, pecans and luxurious vegan icing drizzle.

Ingredients

For the cake

30ml cooking oil

80ml almond milk / coconut milk / soya milk

300g Snowflake Creations Malva Pudding Mix

1cup finely grated carrot

1  /2 crushed pineapple, drained

3  /4 cup desiccated coconut

1  /4 cup coarsely chopped pecan nuts (optional)

For the vegan icing drizzle

15ml freshly squeezed lemon juice

1  brown sugar mix

50g plant butter

Method

  • First bake the cake…
  • Preheat the oven to 180°C
  • Combine oil, almond milk (or coconut milk / soya milk) and then add pudding mix
  • Beat batter with a whisk until smooth and combined
  • Add grated carrot, crushed pineapple, desiccated coconut and pecan nuts to the batter and mix
  • Pour batter into a greased 10 x 20 cm loaf tin
  • Bake for about 50 minutes, remove from oven and cool
  • … then make the icing drizzle
  • Mix lemon juice and brown sugar mix in a saucepan, then add plant butter and melt together on medium heat
  • Simmer for 5 minutes
  • Drizzle over cooled carrot cake and serve
