Ingredients

For the biscotti

500g Snowflake Creations Chocolate Brownie Mix

200g Snowflake Cake Wheat Flour

30g Snowflake Baking Powder

120ml almond milk / coconut milk / soya milk

120g flaked almonds

160g dried fruit of your choice (optional)

For the vegan chocolate fondant icing

1  baking chocolate sachet

1  fondant icing mix sachet

20ml water

Method

  • First bake the biscotti…
  • Preheat the oven to 180C
  • Combine brownie mix, flour and baking powder
  • Add almond milk (or coconut milk / soya milk) to the dry ingredients and mix, then add flaked almond nuts and fruit and combine
  • Dust hands with flour. Make two log shapes on a greased baking tray leaving a large space between the two
  • Bake for about 20-30 minutes
  • Cut the loaf into diagonal slices while hot
  • Dry the biscotti in the oven for 8 hours at 60C
  • … then make the fondant icing
  • Slowly melt baking chocolate in a bowl over simmering water
  • Add water to fondant icing mix and mix until smooth
  • Pour icing mixture into melted chocolate and stir until combined, then immediately drizzle hot chocolate mixture over biscotti
